Basically, there are two types of coins silver and gold. They both serve the same purpose but in different quantities.
The first thing you can do is cook meals. You can cook meals in two ways; either by ingredients or by currency (coins).
The second thing you can use is gem crafting. There are also two ways to do it; either by material or by using the coins.
The third thing is to use them in Collectopedia. For that, you have to be in the quest system, you can use coins to fill in the Collectopedia cards. However, it is not an efficient way because coins can be used in more valuable things than in Collectopedia.
And finally in the quest system in the characters menu, you can use coins to level up the character classes.
