First of all, you have to boot up your game, then go to the home section and click on the Transfer tab. After that, go into the transfer list and press L3 to add players to the transfer list on the bottom right of your screen.
After getting there, you can do a player search, a staff search, a club item search, and a consumable item search. You will see what you have in your club.
When you are doing a player search, you can press the left stick once again to go to the advanced filters, and then look for the Highest value players or the highest-rated players.
