First, you must sneak up behind your enemy and then crouch by pressing L3 once. If you want to uncrouch, then press L3 again. Just sneak up on your enemy and press R2 for a heavy attack, then do a light attack.
You can also use the same tactic on other enemies. The other trick you can use with crouching is pressing L3 to crouch and then pressing R3 to lock onto the target. After that, get close to the target and press R2 to attack.
